Hand-Cut Since 1989
If you are looking for a steakhouse in Breckenridge, Hearthstone is worth knowing about. We are a fine dining restaurant rather than a traditional chophouse, but hand-cut steaks have anchored our menu since 1989, and they are prepared with the same sourcing and technique that Executive Chef Jordan Kuhry brings to every plate. Dinner is served nightly in the historic Kaiser House at 130 S Ridge Street, in the heart of downtown Breckenridge.
The Steaks
Prime Beef Filet Mignon
Served with pinot noir and mystic mountain mushroom demi-glace, pinwheel au gratin potatoes, and roasted sweet stem caulilini with lemon-chive butter. Available in two cuts, and gluten-free.
Wagyu Ribeye
Finished with black truffle compound butter and served with farro risotto of caramelized onion, trumpet mushroom and brigante truffled pecorino, asparagus spears and pearl onions.
Achiote Tenderloin Tips
A smaller way in, from the starters: chicharron, cotija, pico de gallo, guacamole and cherry chimichurri.

Beyond the Beef
This is where a night at Hearthstone parts company with a conventional steakhouse. Alongside the beef, the kitchen works in Rocky Mountain game and wild-caught seafood.
Colorado Rack of Lamb
Rosemary parmesan crust, port peach demi-glace, Tillamook white cheddar and roasted garlic yukon mashed potatoes, broccolini and aged balsamic. Gluten-free.
Blackberry Elk
Garlic granola crust, marionberry demi-glace, yukon gold mashed potatoes with goat chevre, and hickory smoked bacon brussels sprouts.
For guests who want the range of a chophouse without the sameness of one, the game dishes are usually the reason people come back.
